There’s something satisfying about extending one meal into many. I used leftover roasted and steamed veggies from Sunday night’s dinner for lunches yesterday, then made a frittata out of the rest for dinner last night (added feta, herbs and caramelised onions). And had leftover frittata and salad for brekky- topped with avocado, hemp seeds and spring/green onions.
Anyone would think I think about food all day. Me? Never!
