‘Peanut Butter and Cacao Rough’- PMT


This is perfect food when dealing worth a hormone imbalance. Magnesium and antioxidants in the cacao, good fats in the nuts and coconut. So easy, so yummy, so good for you.


1 cup coconut, desiccated or shredded
1 cup raw cacao powder
1 cup coconut oil
1/2 cup any organic dried fruit (I had apricots in the pantry)
1 cup any nut, roughly chopped (I used macadamia nuts)
1/3 cup (or to taste) sweetener, optional. Use maple syrup, coconut nectar, raw agave, rice syrup, raw honey
1/3 cup organic peanut butter

Method – In a bowl mix together all the ingredients apart from the peanut butter. You may need to heat this in the cooler months. Press/pour half of the mixture into a tray (30×30 ish depending how thick you want it) then slather the peanut butter on top, or swirl it through. Cover with the remaining half of the coconut mixture then pop in the freezer, and practice patience. When firm, break into chunks using a knife and get ready for a perfect example of yummy Food as Medicine…and Heaven on Earth.
