Tahini + Chia Parfait – Tahini Week

‘I looooovvvvveee parfait.’ How can anyone say ‘parfait’ without saying it like donkey does in Shrek, the original? Its such a daggy word, but says it all. Kind of like ‘fondu’ but healthful. Of course use your imagination here and use different fruits in season, vary your whole sugar (and add as you like) and add nuts and seeds if you like.

3 tbsp tahini – hulled or unhulled, up to you
2 cups of clean water
2 tbsp coconut nectar
1 tbsp of hemp seeds
2 tbsp chia seeds
1 tbsp raw cacao powder
1 tsp maca powder
1/3 cup fruit like berries organic goji berries, pomegranate seeds or chopped pear
1/3 dry roasted nuts and seeds

Method – Blend or whisk together the tahini, water and coconut nectar, then stir in the hemp and chia seeds (just coz I like to keep their texture). Split the mixture between 2 bowls then to one add the maca powder and raw cacao, and to the other the fruit and/or nuts. Using a couple of tall glasses scoop in a couple of tablespoons of the fruit mixture to the bottom of each glass then top with the same amount of cacao mixture. Keep layering until you reach the top. To serve why not sprinkle some more hemp seeds, pomegranate seeds or cinnamon on top? #TahiniWeek #TahiniandChiaParfait
