Turmeric Week

If you suffer from arthritic pain you may want to consider adding more turmeric to your daily diet, as it’s been shown to help ease the pain associated from arthritis thanks to its anti-inflammatory properties. Here’s a nice way to include it –
‘Scrambled Tofu Breakfast Burrito’.
Serves 2
2-4 tsp olive, macadamia or coconut oil
1 tsp turmeric, ground or 1 tbsp fresh
1 tsp cumin, ground
2 cups button or field mushrooms, sliced
1 garlic clove, crushed
1 small block (180 g) of soft tofu, crumbled or mashed
1 tbsp tamari
1/2 cup coriander leaves
cracked black pepper
2 big handfuls of rocket or baby or English spinach, roughly chopped
2 pieces of flat bread – spelt Mountain Bread of a gluten free one you like.
In a heavy-based pan, heat the oil then add the turmeric. Stir for about 30 seconds before adding the mushrooms and garlic. Cook until mushrooms start to soften—you may need to add a dash of water to get the mushrooms cooking. Add the tofu and stir over a medium- high heat for about 2 minutes, adding in the tamari. When heated through, remove from the heat and add the coriander, spinach and pepper. Lay your flat bread down the spread with tomato chutney or a salsa (all natural of course) and maybe some diced cucumber and tomato and slices of avocado.
Variations –
– Add 1 tsp grated ginger in with teh turmeric
– Almost any vegetable you like can be mixed in the with the mushrooms—try corn, chopped zucchini, diced tomatoes and grated carrots or pumpkin, as they all work beautifully
– Add 1/2 tsp cayenne pepper for a morning kick.
