This isn’t exactly one of your recipes, but it is inspired by the ingredients and methods from your recipe books and I wanted you to know that you have revolutionised the way I cook. This is an easy coconut pudding that I often whisk together, using 1 tbsp each of psyllium husks, chia seeds, non-GM lecithin granules, spirulina powder, LSA and a complex sweetener (like coconut nectar), with 1 tsp each of cinnamon and ground ginger, whisked in a bowl with 400ml can of coconut milk. If it’s too thick, I splash in some rice milk. It thickens in the fridge and goes nicely with passionfruit. Lisa.’ #MayCreations
