A lovely tea to keep you warm in the cooler months, and loaded with medicinal qualities. It’s a very satisfying thing to do. Make extra spice mix and keep it in the fridge for up to 3 months.
Start with whole spices (except for the ginger; use ground ginger) and grind them yourself – black peppercorns, whole cinnamon sticks, ground ginger, cardamom pods, whole cloves, and whole nutmeg. Use a coffee grinder or grind them by hand in a mortar and pestle.
Bring 1 tsp of ground spices per cup of water to a simmer. Or use your choice of milk instead of water – organic cow’s, almond, coconut, rice, hemp, organic soy – and some black tea (1 tsp per cup of liquid) – Ceylon or Assam or nice. Organic is best.
Once it comes to a simmer, cover and remove from the heat. Allow to steep for 5 minutes. Strain. Sweeten to taste, if thats your thing. Use raw honey, coconut palm sugar or maple syrup.
