A perfect food to help boost fertility – it includes legumes, garlic, olive oil, green leafy veggies and goats’ feta if you like.
1 tbsp olive oil
1 red onion, sliced
2 garlic cloves, crushed (optional)
500g passata (or 2 BPA-free cans crushed tomatoes and 1 tbsp tomato paste)
2 BPA-free cans navy or butter beans, rinsed and drained
1 tbsp fresh oregano leaves or 1 tsp dried
Sea salt to taste
1-2 tbls Panela/rapadura or coconut sugar
1 tbsp Dijon Mustard
1 big handful of rocket
1 cup goat’s feta, crumbled roughly
Saute the onion in a cast iron pan with olive oil and garlic. Once the onion has softened add the beans, passata, mustard, oregano and salt. Bake in the oven on high. Once it’s almost cooked, add the feta and put back in the oven to allow the feta to soften a little.
Serve with a handful of rocket.
