Seasonal ingredient of the week – Kale. It has more antioxidants than any other veggie, is wonderful for cleaning out an overworked, sluggish and grumpy liver, contains heaps of calcium, iron, fibre plus magnesium, vitamin A and folate. So easy to grow and keeps giving all year. There are a few different types – Tuscan/Cavalo Nero (black cabbage), Russian, Rainbow, Scottish and Redbor. This one is Russian Kale in my garden. I’ll post some gardening tips also. This week I’ll make and post Kale Chips, Kale and Mushroom Frittata, Kale Hummus, Miso Soup with Kale and whatever else happens in my kitchen with kale. #KaleWeek
