One Pot Winter Warmers: ‘Chinese Eggplant + Silken Tofu’

This is one of mine (and yours) favourite recipes. It’s difficult to find a natural dashi powder these days, so use veggie stock instead. If you’re avoiding tofu, then replace it with any organic protein you like. This is a super easy and nutrias recipe. Tofu doesn’t really like to be frozen, so make enough for one meal to 3 days.
